SALMON LOAF OR CAKES
 

1 (1 lb.) can salmon, drained & flaked
2 c. soft bread crumbs
1 tbsp. chopped onion
1 tbsp. butter, melted
1/2 tsp. salt
1/2 c. milk
1 slightly beaten egg

In a bowl, combine salmon, crumbs, onion, butter and salt. Combine milk and egg; add to salmon mixture and mix thoroughly. Shape into a loaf on a greased shallow baking pan or in 7 1/2" x 3 3/4" x 2 1/4" loaf pan. Bake at 350 degrees for 35 to 40 minutes. Or shape into round patties and fry in hot oil until golden brown on both sides.
