TACO FISH
 

Fresh or frozen fish fillet
Salsa
Grated Colby cheese
Ground red pepper (opt.)

Orange roughy, cod, flounder or other fish fillet may be used. If frozen, thaw in microwave oven. Place in shallow pan in conventional oven preheated to 400 degrees. Cover fish with layer of salsa. (I prefer the mild variety, but however hot the salsa, it may be enlivened by adding a little ground red pepper.) When fish is nearly baked (flakes easily with fork), sprinkle with grated Colby cheese and continue baking until cheese is melted.

Serve 1 fillet per person.
