1 env. onion soup (dry) 1 c. water 1 c. tomato paste (or ketchup) 1 c. sliced canned carrots 1 c. canned green beans 1 lb. fish (haddock, cod, or swordfish) Blend soup and water; add veggies with fish on top. Simmer 10 minutes; turn once. Stir in a little basil (optional). Arrange fish and veggies in oblong casserole; cover with sauce. Microwave for 10 minutes more, turning over once. Serves 2. Serve over rice or potato. |
