EGG - HASH BROWN CASSEROLE
 

2 c. hash browns
4 c. hot water
5 eggs
1/2 c. cottage cheese
1 c. shredded Swiss cheese
2 to 3 tbsp. minced onion
1 tsp. salt
6 to 8 slices bacon
Paprika

Pour hot water over hash browns. Let stand 10 minutes. Drain well. Beat eggs, add potatoes and all other ingredients except bacon and paprika. These you put on top. Pour into 9 inch pie pan. Refrigerate overnight.

Place cold pie pan uncovered in cold oven. Bake at 350 degrees for 35 minutes or until potatoes are tender, set. Good for breakfast.
