10 eggs, hard boiled Peel and cut into halves. Place on serving dish. Pour boiled dressing over all and serve. BOILED DRESSING: 3 egg yolks, beaten slightly 3 tbsp. warm vinegar Beat together. Cook, stirring constantly, until thick (about 1 minute). Set aside. In a separate bowl cream: 2 tbsp. butter 1 1/2 tsp. sugar 1/4 tsp. salt 1/2 tsp. black pepper 3 tbsp. finely minced onion 6 tbsp. finely minced celery Now stir in vinegar-egg mixture and cool. Fold in 1/2 cup cream, whipped and 1/2 cup mayonnaise. Spoon over this hard cooked eggs and chill in refrigerator. Garnish with paprika and watercress. When meat is in short supply, we like these eggs served with spinach or turnip greens and new potatoes for a real treat. |
