SOY MAYONNAISE/SALAD DRESSING
(EGGLESS)
 

1 c. soymilk powder
1 c. water
1/2 tsp. salt
1/2 to 1 c. vegetable oil
1/4 c. lemon juice

OPTIONAL SEASONINGS:

1/4 tsp. garlic powder
1 tsp. brewers yeast
1/2 tsp. onion powder
Any herbs you like
Chili powder

Be creative: recipe may be cut in 1/2 or 1/4 while you find the combinations of seasonings you like. Blend soy milk powder, salt, water and seasonings of your choice until smooth. With blender still running remove cover and add oil in a little stream until hole in center closes up and mixture stops moving around in pitcher. Stop blender. Pour tin a bowl or storage container. Still in lemon juice. Mixture will thicken and get a little lighter in color with the lemon juice. This will keep up to 2 weeks in the refrigerator. It doesn't have any preservatives so that is why it doesn't keep as long as regular mayonnaise. Experiment with different combinations of seasoning, more or lees oil and lemon juice to make it thicker or thinner. More of both ingredients make it thicker. Less of them makes it thinner. I love it on broccoli!
