1 onion, chopped 1 tomato, chopped 1 bell pepper, chopped 4 tbsp. oil 2 tbsp. flour 1 c. water 1 sm. box Velveeta cheese (Mexican style, optional) Saute first 3 ingredients in 2 tablespoons oil. Set mixture aside. Add 2 tablespoons oil and 2 tablespoons flour to pan. Let thicken and bubble; add water, stirring until well mixed. Add vegetables and chopped Velveeta cheese. Simmer on low - the longer it simmers the better it is. If it gets too thick, add a little more water. |
