1/2 gal. milk
2 c. sugar
1 pt. cream
5 med. eggs, well beaten
1/4 tsp. salt
4 tsp. vanilla
4 Junket tablets
1/4 c. cold water
Dissolve tablets in 1/4 cup cold water. Heat milk to lukewarm (110 degrees). Add sugar, eggs, salt, dissolved tablets and vanilla. Put in ice cream freezer and pack in ice until set (do not add salt to ice at this point) about 30 minutes. When thick add 1 pint cream and freeze, using 4 parts ice to 1 part salt.
Makes 1 gallon.
