PEACH JELLO PARFAIT
 

2 pkgs. peach Jello
2 c. hot water (boiling)
3/4 c. cold water
1 pt. vanilla ice cream
1 can peaches, well drained

Dissolve 1 package Jello in 1 cup boiling water. Add cold water. Chill in serving bowl until slightly thickened (will be consistency of unbeaten egg whites). Dissolve second package of Jello in remaining cup of boiling water. Add ice cream and stir until ice cream melts and mixture is smooth. Pour into glass serving bowl. Chill 1 hour until set but not firm. Place peaches on ice cream and Jello mixture and cover with the thickened clear Jello. Chill until firm. Top with whipped cream and extra peaches if desired.
