CREPES WITH RUM-NUT FILLING
 

1 c. flour
1/4 tsp. salt
2 1/2 tbsp. sugar
1/2 tbsp. grated orange rind
2 eggs
1 c. milk
2 tbsp. melted butter

FILLING:

1 c. sugar
1/2 c. butter
1/2 c. chopped walnuts (or other nut)
1/2 c. rum

1. Sift the flour, salt and sugar. Add orange rind.

2. Add slightly beaten eggs and milk to the butter mixture. Stir into the flour mixture and beat until smooth.

3. Butter a small fry pan. When hot, pour in about 2 tablespoons of batter, tipping the pan so that the batter spreads. When brown, turn and cook other side. Stack until ready to use.

4. To make filling, cream butter and sugar. Add nuts and rum and mix well.

5. Fill and roll the crepes. Sprinkle with a little sugar. Warm in a 375 degree oven before serving. Serves 6.
