1 c. butter 1 c. brown sugar 1 c. granulated sugar 2 eggs 1 tsp. vanilla 1 1/2 c. quick oats 1 1/2 c. flour 1 tsp. baking soda 1/2 tsp. baking powder 1 c. raisins 1 c. walnuts 6 oz. pkg. semi-sweet chocolate chips 1/2 c. flaked coconut In the large bowl of an electric mixer, beat together butter, sugars, eggs and vanilla until mixture is light, about 2 minutes. Stir in remaining ingredients until blended. Drop batter by the heaping tablespoonful on a greased cookie sheet. Bake at 350 degrees for about 10 to 12 minutes or until cookies are very lightly browned. Don't try to double the recipe. |
