SHERRY TRIFLE
 

1 (8 inch) sponge layer or 10 lady fingers
1/3 c. raspberry jam
1/2 c. sherry
2 c. diced fresh fruit; bananas, raspberries or strawberries ore best
1 env. strawberry or raspberry jello
1 env. Bird's custard style dessert mix
1 tbsp. sugar
1/2 c. heavy cream, whipped

Sandwich the cake or lady fingers together with raspberry jam, cut into pieces and arrange in a glass serving dish. Moisten the cake with sherry. Arrange fruit on top.

Make up the jello according to instructions on packet and pour over the cake and fruit. Allow to completely set, and chill in the refrigerator. Combine the dessert mix and sugar in a saucepan. Add 2 tablespoons of the milk and mix until smooth. Add remaining milk. Bring the mixture to a full boil over a medium heat, stirring constantly. Remove from the heat. Cool for 5 minutes, stirring occasionally. Pour over set jello, fruit and cake. Chill. Decorate with whipped cream and garnish.
