SIMPLE CHEESECAKE TARTS
 

2 (8 oz.) pkg. cream cheese
3 eggs
1/2 c. sugar
1 tsp. vanilla
24 vanilla wafers
1 can pie filling (cherry, peach or blueberry)

Line cupcake tins with paper or foil cases. Place 1 vanilla wafer in each, round side up. Cream together cream cheese, eggs, sugar and vanilla, beating for about 10 minutes. Fill cupcake cases about 2/3's full with the mixture. Bake in a preheated, 350 degree oven until filling is firm. Cool thoroughly then spoon pie filling on top of each and refrigerate.
