VANILLA HOMEMADE ICE CREAM
 

2 cans chilled evaporated milk
2 c. sugar
8 lg. eggs
1 c. sugar
1/8 tsp. salt
1 1/2 tbsp. vanilla
1/4 tsp. almond extract, if desired
About 1/2 gallon whole milk

Whip milk and sugar together; pour this into freezer can and put dasher in place. Beat together eggs, sugar, and salt until light yellow and thick. Pour this into freezer can with first mixture, then add vanilla and almond extract. Add milk. Freezer according to freezer instructions. Delicious as is or with your favorite topping.

VARIATIONS:

Use any fresh in season fruit such as strawberries, peaches, blackberries, raspberries. Use about 2 cups for 1 1/2 gallon freezer. Decrease sugar in recipe by 1/2 cup and add this to the fruit. Mash fruit and let it absorb sugar. Pour fruit in freezer can just before the last addition of milk. You will not use quite as much milk.

Banana-Black Walnut

Mash about 4 medium sized ripe bananas and 1/2 cup chopped black walnuts. Omit the almond extract and add 1/2 teaspoon walnut extract.

Pineapple:

Use large sized can of crushed pineapple.

Blueberry:

Us e one can of blueberry pie filling.
