RASBERRY LIME RICKEY ICE CREAM SODA
FLOAT
 

1 lime
1/2 pint raspberries
pinch of salt
1 cup French vanilla ice cream
2 cups lemon-lime soda
sugar or honey, to taste (a tablespoon or so)
ice
garnish: fresh mint sprig, lime wedge or berry (optional)

Put the zest and juice from 1 lime into a blender, removing any seeds.

Note: the zest is the green portion of the peel which is absent of any white (the white part is bitter, while the green of the peel contains the flavor and oil of the lime).

Wash raspberries and drip dry for several minutes, then add to blender with a pinch of salt. Process until smooth; add lemon-lime soda. Process until smooth. Taste and add a small amount of sugar or honey, if desired.

Pour into a tall glass over a few cubes of ice topped by a large double scoop of vanilla ice cream.

Serve with a straw inserted into the center of the ice cream and a long ice-tea spoon alongside. A sprig of mint, a wedge of lime or a raspberry can be used to garnish.
