PEANUT BUTTER - OATMEAL COOKIES
 

1/2 c. peanut butter 3/4 c. granulated sugar 1/2 c. brown sugar (packed) 1 egg 1 tsp. vanilla 1 1/4 c. flour 1/2 tsp. baking powder 3/4 tsp. soda 1/4 tsp. salt 1/4 c. uncooked oatmeal

If you use oatmeal, add 1/4 cup sugar.

Preheat oven to 350 degrees. Mix shortening, peanut butter, sugars, egg, and vanilla together. Blend all dry ingredients. Stir into shortening mixture.

Roll dough into 1 1/2-inch balls. Place 2-inches apart on very lightly greased baking sheet. You may flatten criss-cross style with fork dipped in flour or sugar. Bake 10-12 minutes.

(1/4 cup chocolate chips can be added instead of oatmeal.) For softer cookies, substitute diet butter for 1/2 of shortening.
