DANISH APPLE BARS FROM DENMARK
 

2 1/2 c. flour
1 c. Crisco (shortening)
1 tsp. salt
1 egg, separated
2/3 c. milk
5 to 6 diced apples
1 c. sugar
1 tsp. cinnamon

GLAZE:

1 c. powdered sugar
1/2 tsp. vanilla
1 tbsp. water

Mix flour, salt, and shortening. Add slightly beaten egg yolk and milk; mix. Roll out half of the dough for a 15 1/2 x 10 inch pan. Mix the apples, sugar, and cinnamon, then place on the dough. Roll out the other half of the dough to fit the top. Pinch the edges together. Beat the egg white until stiff, then brush over the top and prick holes in the top dough. Bake at 400 degrees for 45 minutes. Mix glaze ingredients and drizzle over hot bars. Cut into 1 1/2 to 2 x 4 inch bars. Do not place in an air-tight container as the bars will get soft and soggy.

Options: Use Sprite instead of milk for the crust. Use more apples and more cinnamon. Add 3 teaspoons flour to apple mixture. Use 3/4 cup brown sugar and 1/4 cup white sugar.
