TURTLE CHOCOLATE COOKIES
 

2 squares baking chocolate
2 eggs
1 tsp. vanilla
1 tsp. salt
1/3 c. butter
3/4 c. sugar
1 c. all-purpose flour
1/2 c. finely chopped nuts (opt.)

Melt butter in a saucepan over low heat. Beat egg; add sugar, vanilla and beat until well blended. Fold in flour and salt. Blend in chocolate mixture and nuts. Drop by teaspoon in oblong shapes; like little turtles, all over a heated waffle iron (I put 1 teaspoon on each square of iron). Close iron and bake for 45 seconds to 1 minute. Brush with a thin chocolate frosting.

CHOCOLATE FROSTING:

1/2 c. (or so) powdered sugar
1 tbsp. cocoa
2-4 tsp. milk

Mix frosting ingredients. Make frosting thin enough to spread easily over cookies. Also add a little butter. I usually put frosting on while cookies are hot then they will have a nice shiny finish.
