WHITE CHOCOLATE CHIP PECAN COOKIES
 

1 lb. butter, softened
2 c. dark brown sugar
1 1/2 c. granulated sugar
2 tbsp. vanilla
3 lg. eggs
6 c. flour
3/4 tsp. salt
1 1/2 tsp. baking soda
2 c. chopped pecans
4 c. white chocolate chips or 3 bars white chocolate, grated

Preheat oven to 350 degrees. Line cookie sheets with foil. In large mixing bowl, beat butter, brown and white sugars until light and fluffy. Beat in vanilla and eggs until blended. Beat 4 minutes more. Beat in flour, salt and baking soda until well mixed. Drop by tablespoons onto foil-lined cookie sheets and use glass or hand to flatten a little. Bake 8 to 10 minutes. (Baking time varies with size of cookies; do not over bake or they will be hard when cool.) Let stand 5 minutes, then remove to wire racks to cool.
