2 lg. firm cucumbers 3/4 c. vinegar (apple cider) 1/2 to 3/4 c. sugar 1/2 tsp. pepper 1/2 to 1 tsp. salt Slice cucumbers thinly - you may peel if desired. Mix last 4 ingredients until sugar is dissolved. Pour over cucumbers. Cover and refrigerate at least 2 hours. Drain and serve in a clear glass jar or bowl. You may also use sliced green, red, and yellow bell peppers in place of cucumbers. |
