HAWAIIAN CHEESECAKE BARS
 

1 c. flour
1/2 c. sugar
1/2 c. soft butter

Combine crust ingredients at low speed in mixer, or with fork, until particles are fine. Pat into greased 9 inch square pan. Bake at 350 degrees for 14 to 19 minutes, or until golden brown around the edges.

FILLING:

1 (8 oz.) pkg. cream cheese, softened
2 tbsp. sugar
2 tbsp. milk
1 egg
1 tsp. vanilla
1 (8 oz.) can pineapple, well drained

Blend softened cream cheese with sugar, milk and egg. When smooth fold in vanilla and the well drained pineapple. Spread filling over partially baked crust.

TOPPING:

Mix together: 1 c. flaked coconut

Sprinkle coconut topping over filling. Bake for an additional 17 to 20 minutes, or until coconut turns brown on edges. Cool. Keep refrigerated. Cut into bars.
