GINGERED WALNUTS
 

3/4 c. sugar
2 tbsp. light corn syrup
1/2 tsp. salt
2 tbsp. molasses
1/3 c. water
1 tbsp. butter
1/4 tsp. ginger
2 c. walnut halves

Combine sugar, syrup, molasses, salt and water. Stir over low heat until sugar is dissolved. Boil to 238 degrees or until a few drops form a soft ball when dropped in cold water.

Remove from heat and blend in butter and ginger. Add walnuts and stir gently until mixture becomes creamy. Turn out onto waxed paper and separate nuts. Makes about 1 pound.
