GRILLED SHRIMP
 

4 to 5 uncooked shrimp, per person, with shells
1 c. olive oil
Juice of 2 lemons
1/4 c. soy sauce
1/2 c. dry red wine
1/4 c. chopped parsley
3 tbsp. fresh or dried tarragon

Cut out black vein, but leave shell attached to shrimp. Mix all ingredients. Pour over shrimp. Marinate for at least 2 hours. Cook shrimp over hot coals for 5 to 6 minutes. Shrimp should be moist and tender with slightly charred shells.

DIETITIAN'S NOTE:

Cutting back on the olive oil in this recipe will reduce the calories significantly. If fresh tarragon is available to you, try making tarragon vinegar.
