MEATBALL MINESTRONE SOUP
 

1 1/2 c. chopped onions
3/4 c. chopped celery
2 minced garlic cloves
1 (28 oz.) can tomatoes, cut up and drained
3 (14 oz..) cans chicken broth
3/4 c. chopped carrots
2 1/2 c. chopped peeled potatoes
1 tsp. dried basil leaves
1 tsp. thyme leaves
1 1/2 c. uncooked Rotini
1/2 cooked turkey meatballs recipe

Use large sauce pan with nonstick cooking spray. Heat over medium until hot. Add onions, celery and garlic. Cook and stir until crisp. Stir in remaining ingredients except Rotini and meatballs. Bring to a boil. Reduce heat, cover, simmer for 35 minutes. Stir in Rotini and meatballs, simmer uncovered an additional 10 to 12 minutes until veggies and Rotini are done. Serve with parmesan cheese. 10 servings.
