TARTAR STEAK
 

1/2 lb. ground sirloin
1 egg
1 green onion, finely chopped
1/2 tsp. salt
2 dashes red pepper sauce
Soft butter
5 slices bread

Mix meat, egg, onion, salt and pepper sauce. Set oven control at broil and/or 550 degrees. Butter one side of each bread slice. Broil 3 inches from heat until bread is toasted. Turn; cover unbuttered side with meat mixture. Broil 1-2 minutes for rare, 2-3 minutes for medium. Cut each bread slice into 9 bite-size pieces. 45 appetizers.
