TOMMI'S FAMOUS SHRIMP TOAST
 

Approximately 25 slices day-old bread
1/2 lb. fresh shrimp, shelled, deveined
1 egg
1-2 tbsp. flour
Cooking oil
1 sm. white onion, quartered
Salt or soy sauce

Prepare bread by cutting the crust off all sides. Place all ingredients except bread and oil in a blender. Blend to form a thick paste. Apply paste to one side of bread. Cut bread into quarters to form squares or cut diagonally to form triangles.

In a pan heat oil to 350-375 degrees. Place toast in pan paste side down. After browned, turn once to brown on the other side. Drain on paper towels. Sprinkle with salt while hot or place a drop of soy sauce on each piece before serving.
