1/2 lb. Feta cheese, crumbled 1/2 lb. cottage cheese (sm. curd) 1/2 c. Ricotta, Parmesan, or any sharp cheese 3 oz. cream cheese, softened 4 eggs, salt and pepper to taste 1/2 lb. butter, melted 1/2 lb. pastry sheets (filo dough), cut leaves lengthwise into thirds Beat eggs; fold in cheeses. Add salt and pepper (to taste). Brush melted butter on each pastry sheet. Place a teaspoon of the filling on the end of the filo strip. Fold the lower corner over the filling to make a triangle. Then fold the upper corner over the filling to make the next triangle. Continue folding from side to side until the entire strip is used and a small triangle is formed. Brush with melted butter. Place on cookie sheet. Bake at 350 degrees (about 15 minutes or until golden brown). Serve hot or when cool, sprinkle with a sugar-cinnamon mixture (optional). Note: The filo sheets dry out quickly. So cover the 2/3 remaining sheets with a smooth, damp towel to retain moisture. |
