HOMEMADE GRAHAM CRACKERS
 

2 c. whole wheat flour
1 c. enriched flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 c. shortening
1 c. packed light brown sugar
1/2 c. sugar
1 tsp. vanilla extract
1/2 c. milk

Stir together flours, baking powder, soda and salt. Cream shortening and sugars together until fluffy. Add vanilla. Add flour mixture alternately with milk, mixing well after each addition.

Chill dough overnight. Divide dough into quarters. Roll out each portion on floured surface to rectangle 1/8 inch thick. Trim to 5x15 inch rectangle.

Cut into 6 (2 1/2x5 inch) rectangles. Make a line down center of dough with back edge of knife. Mark each 2 1/2 inch square with prongs of fork.

Place on greased baking sheets. Bake in preheated 350 degree oven 10 to 12 minutes or until crisp and edges are browned.
