PINEAPPLE CHEESEBALL
 

2 (8 oz.) pkgs. cream cheese, softened
1 (8 1/4 oz.) can crushed pineapple, drained
1 med. green pepper, finely diced
1 1/2 c. chopped pecans

Mix cream cheese, drained crushed pineapple, diced pepper and 3/4 cup of pecans together in a bowl. Mix well then shape into a ball. Roll ball into remaining 3/4 of pecans. Cover and refrigerate until serving. Serve with a wheat cracker for best results. This may be made a day ahead.

Variation: Add 2 teaspoons seasoned salt and 1/4 cup chopped green pepper.
