Preheat oven to 350°F.
Combine bread and poultry seasoning; set aside. Combine soup, water, onion, celery, pepper and butter in saucepan. Bring to a boil, stirring occasionally.
Pour soup mixture over seasoned bread; mix well and pour into a 13x9x2-inch greased baking pan.
Bake 25-30 minutes or fill a 15-17 pound turkey just before roasting.
** For a drier stuffing, decrease water 1/4 cup. For more moist stuffing, increase water 1/4 cup.
