THUMBPRINT COOKIES
 

2/3 c. butter, softened
1/4 c. plus 2 tbsp. sugar
1/2 egg yolk
2 tbsp. orange juice
2 c. plus 2 tbsp. flour, sifted
1/4 c. jam (raspberry, strawberry, or cherry)

Place all ingredients, except jam, into large mixing bowl and mix with electric mixer. Stop mixing when mixture looks flaky. Roll dough into balls by rounded measuring teaspoons. Place on greased cookie sheet an inch apart. Place thumb into center of cookies making a deep indentation. Bake 10 minutes.

Remove from oven and quickly fill in indentations with the jam. Return to oven and bake 5 minutes more. Remove to rack to cool.
