SEAFOOD CASSEROLE
 

1 1/2 c. raw rice, cooked & set aside
1 c. celery, chopped
1 c. onion, chopped
4 tbsp. plus 4 tsp. butter
4 tbsp. flour
2 c. milk
Pinch of salt
1 tsp. Worcestershire sauce
1 c. mayonnaise
1 can shrimp
1 can crab, flaked
1 can tuna, flaked
1 sm. can mushrooms, drained
Bread crumbs
Parmesan cheese

Saute celery and onion in 4 tablespoons butter. Make white sauce of 4 teaspoons butter, flour, milk, salt and Worcestershire sauce. Add onion and celery to cream sauce, then add mayonnaise and mix well. Add shrimp, crab, tuna and mushrooms. Place rice in buttered 9 x 13 inch pan and pour seafood mixture over rice. Top with bread crumbs and sprinkle with Parmesan cheese. Bake at 325 degrees for 30 to 40 minutes.

Serves 12.
