SAUSAGE & ZUCCHINI CASSEROLE
 

12 oz. pkg. pork sausage
1/2 green pepper in julienne strips
1 med. onion, sliced
4 c. sliced zucchini
1 tsp. oregano
1 can condensed tomato soup
1 (10 oz.) pkg. Green Giant frozen long grain rice
4 oz. shredded Monterey or Colby cheese
1/4 c. water

Brown sausage, peppers and onions; drain. Stir in zucchini, oregano, soup and water. Cover and simmer about 15 minutes. Stir in thawed rice. Sprinkle with cheese and cover. Cook over low heat until cheese is melted and rice is heated through.
