LIVER AND APPLE CASSEROLE
 

1 lb. calves liver
2 med. onions, sliced
6 slices bacon
4 oz. butter mushrooms
1 tsp. dry mustard
2 oz. fat
1 oz. flour
1/4 tsp. salt
1/8 tsp. pepper
1 1/4 c. water
2 med. apples
1 tsp. dry mustard

Cut liver into thin slices. Mix flour, salt, pepper, mustard together and coat liver. Brown liver in heated fat. Grease casserole dish. Fill in layers liver, sliced apple, slice onion then mushrooms. Top with bacon. Add water, cover and bake at 350 degrees for 1 1/2 hours, removing lid for last 20 minutes. Serves 4.
