MEXICAN CORNBREAD CASSEROLE
 

1 lb. lean ground meat
1 pkg. taco mix
2 eggs
1 can creamed corn
2/3 c. milk
1 pkg. Jiffy corn muffin mix
1 pkg. jalapeno cheese

Brown meat and drain. Add taco seasonings (prepare meat the day before). Mix together the corn bread mix, the eggs and the milk.

Grease shallow dish (13 x 9 inches). Spread half the corn bread mix in baking dish, then the meat, then the corn, then thin slices of the cheese. Top with the rest of the corn bread mix. Bake at 450 degrees for 25 to 30 minutes.
