PECAN DIVINITY
 

3 c. sugar
2/3 c. white corn syrup
1/2 c. cold water
2 egg whites
3/4 c. broken pecans (or walnuts)
1/4 tsp. salt
1 tsp. vanilla

Combine sugar, syrup and water. Boil until it spins a thread 10 to 12 inches long (hard ball stage). Add salt and vanilla to egg whites. Beat until very stiff (while sugar mixture is boiling).

Pour the hot sugar mixture over the beaten egg whites while beating constantly (may take 10 minutes). Mixture will thicken as it is beaten. Add nuts. Drop by teaspoonfuls on waxed paper or pour into oiled pan.

Spread and cut when cooled and hardened. Pecans may be put on top if desired.
