PEPPERMINT CANDY MINTS
 

1/3 c. light Karo syrup
1/4 c. butter
6 tsp. peppermint (can use more)
4 c. sifted confectioners' sugar
2 drops red color
2 drops green color

Combine and beat Karo, butter, and extract. Gradually add 2 cups sugar. Stir in as much remaining sugar as you can with spoon until smooth. Turn out on confectioners' coated surface. Knead in enough remaining sugar to make stiff dough that is smooth. Divide into thirds. Color 1/3 red, 1/3 green, keep 1/3 white. Shape into 3/4 inch balls. Place on wax paper. Press with fork. Let dry. Makes 75 mints. Maple flavor makes great candy too.
