2 extra ripe, lg. bananas, peeled 1 1/2 c. flour 1 1/3 c. sugar, divided 1/4 c. cocoa 1 tsp. baking soda 1/2 tsp. salt 1/3 c. vegetable oil 1 tsp. vanilla extract 1 firm lg. banana, peeled 2 (3 oz.) pkgs. cream cheese, softened 1 egg 1 (6 oz.) pkg. chocolate chips Slice extra ripe bananas into blender. Whip until pureed (1 cup). Combine flour, 1 cup sugar, cocoa, baking soda, and salt. Stir in pureed bananas, oil and vanilla. Spoon equal amounts of batter into 18 paper lined muffin pans. Slice 2 slices of firm banana over each. Beat cream cheese with remaining 1/3 cup sugar until light and fluffy. Beat in egg until blended. Stir in chocolate chips. Spoon equal amounts over each cupcake. Bake in 350 degree oven 30 minutes. Cool. Makes 1 1/2 dozen. |
