GUINNESS CAKE
 

8 oz. butter
8 oz. brown sugar
1/2 pt. Guinness stout
1/2 lb. raisins
1/2 lb. currants
1/2 lb. sultanas
4 oz. candied fruit, chopped
1 1/4 lb. plain flour
1 tsp. apple piespice
1 tsp. nutmeg
1/2 tsp. bicarbonate of soda
3 eggs

Grease and line a 9 inch cake tin with greased wax paper. Place the butter, sugar and the Guinness in a saucepan and bring slowly to the boil, stirring constantly until the sugar and butter have melted. Mix in the candied fruit and bring mixture back to the boil. Simmer for 5 minutes. Remove from the heat and cool thoroughly. Sift the flour, spices and bicarbonate of soda into a large mixing bowl. Stir in the cooled fruit mixture and beaten eggs. Turn into cbake tin and ake in center of preheated oven, 325 degrees for 2 hours. Test with a skewer. When done, cool in the tin before turning out.
