BEST BANANA COFFEE CAKE
 

1/2 c. butter
3/4 c. sugar
1 3/4 c. all purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. ground cinnamon
1/4 tsp. baking soda
2 beaten eggs
2 ripe med. bananas, mashed (1 c.)
1/4 c. milk
1 tsp. vanilla

In bowl, cream butter and sugar together well. Add 3/4 cup of flour; just until mixture resembles coarse crumbs. Reserve 1/2 cup for topping. Stir together remaining 1 cup flour, baking powder, salt, cinnamon and soda. Stir into butter mixture. Combine eggs, mashed banana, milk and vanilla. Add to dry ingredients, stirring just until mixed. Spread in greased 9"x9"x2" pan. Sprinkle with the reserved 1/2 cup crumb mixture. Bake at 375 degrees for 25 to 30 minutes. Makes 9 servings. For 11"x7"x1" pan, bake at 350 degrees for 45 to 50 minutes.
