4 tbsp. butter 1/2 c. brown sugar 6 halves canned peaches 1/4 c. shortening 3/4 c. sugar 1 egg 1 tsp. lemon juice Rind of 1/3 lemon 1 1/2 c. flour 2 tsp. baking powder 1/2 tsp. salt 1/2 c. milk Melt butter in a round 9" cake pan and add brown sugar. Arrange peaches, cut side up in bottom of pan. Cream shortening and sugar. To this add well beaten egg, lemon juice and rind. Sift dry ingredients and add alternately with milk. Pour over peaches. Bake in 375 degree oven about 45 minutes. Turn upside down immediately and serve hot plain, or with whipped cream. |
