PISTACHIO CAKE AND FROSTING
 

1 pkg. white cake mix
1 pkg. pistachio pudding
1 c. oil
3 eggs
1/2 c. chopped nuts
1 c. club soda
No-stick spray (Pam)

FROSTING:

2 env. Dream Whip
1 1/2 c. cold milk
1 pkg. pistachio pudding
Chopped nuts or coconut

Do not use "pudding in the mix" cake mix.

Cake: Mix cake mix and pudding. Add oil, eggs and nuts (mix will be very thick). Slowly add club soda (mixture will bubble) and beat for four (4) minutes with electric beater. Pour into no-stick sprayed bundt pan. Bake 350 degrees F. for approximately 40-50 minutes, checking with toothpick. Cool 10-20 minutes and then turn out.

Frosting: Blend Dream Whip with milk (whole milk works better than skim or 2%) gradually adding pistachio pudding. Beat until fluffy. Sprinkle with nuts or coconut.
