POLISH APPLE-RAISIN COFFEE CAKE
 

3/4 c. sugar
1/4 c. soft shortening
1 egg
1/2 c. milk
1 1/2 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. raisins
3 apples, pared, cored, thinly sliced
2 tbsp. sugar mixed with 1 tsp. cinnamon

Mix thoroughly the sugar, shortening, egg; stir in milk. Sift together the flour, baking powder, salt and stir into mixture. Add raisins. Spread in a greased 9 x 9 inch square pan. Arrange apple slices in rows over top of batter, pressing slightly into batter. Sprinkle with 2 tablespoons sugar combined with 1 teaspoon cinnamon. Bake at 375 degrees for 30 to 35 minutes. Serve with whipped cream, if desired.
