WALNUT CAKE
 

6 eggs, separate egg yolks & whites
140 grams sugar (5 oz.)
140 grams ground walnuts (5 oz.)
40 grams bread crumbs soaked in cognac (1.5 oz.)
1/4 "Corona" melted chocolate bar or 1/2 Breick bar (3 sq. of baking chocolate)

Preheat oven to 350 degrees F. or 200 degrees C. Grease medium sized cake pan and sprinkle with bread crumbs.

Cream egg yolks and sugar. Add walnuts, bread crumbs and melted chocolate. Beat egg whites until stiff. Blend both with a wooden spoon. Pour in pan and bake for 45 minutes.

FILLING:

1/2 pkg. unsalted butter (8 oz.)
50 grams confectioners' sugar (2 oz.)
70 grams ground walnuts (2.5 oz.)
2 tsp. strong coffee solution

Cream butter and sugar. Add the walnuts and coffee. When the cake is cool, cut and fill using the filling as frosting too. Decorate with chopped and whole walnuts.
