WEIGHT WATCHERS CARROT CAKE
 

1 3/4 c. whole wheat flour
2 1/4 oz. yellow corn meal
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. allspice
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cloves
1/4 tsp. salt
2 c. shredded carrots
1 1/4 c. water
3/4 c. golden raisins
1/2 c. honey
2 tbsp. vegetable oil
1 tsp. vanilla

Combine in large bowl all ingredients given in order. Pour into two 9-inch layer pans or one 9x13 inch pan. Bake until center tests done, approximately 25 minutes for layers and 30 to 35 minutes for 9x13 inch. Bake in 350 degree oven.
