CROCK - POT SPINACH CASSEROLE
 

2 (10 oz.) pkg. frozen chopped spinach, cooked & drained
2 c. cottage cheese
1/2 c. butter, cut up into pieces
1 1/2 c. cubed (or grated) cheese, we like cheddar or Monterey Jack
3 eggs, beaten
1/4 c. whole wheat flour
1 tsp. salt

Grease crock pot. Add all ingredients and stir. Cover. Cook on high 1 hour, then on low 3-4 hours. (I usually double the recipe for a covered dish dinner. It fills the crock pot!)
