1 c. minced onions 4 tbsp. butter 3 lbs. spinach or 3 pkgs. frozen, cooked & drained 1 to 2 cloves of garlic 1/2 c. sour cream 1/3 c. dry bread crumbs 1/3 c. grated Parmesan cheese 3 tbsp. minced parsley Saute the onions and garlic in butter for 10 minutes. Add the spinach; cook over low heat 3 minutes, stirring frequently. Mix in sour cream, bread crumbs, cheese and parsley. Heat, but do not let boil. Taste for seasoning. Serves 6 to 8. |
