SAUTEED SEASONAL VEGETABLES
 

Broccoli
Carrots
Cele ry
Onions
Slivered almonds
Gomasio (recipe in vegetable section)
Brown rice, cooked
Tofu, cubed & soaked in soy sauce

Cut broccoli, carrots and celery into thin slices on a diagonal. Cut onions into rings and separate. Add onions to a hot skillet with 2 to 3 tablespoons oil and 1/3 cup water. Saute until almost tender. Add other vegetables. Steam until they are just crisp-tender, not over cooked. Season with onion and garlic powder and salt. Add tofu. Serve over brown rice. Top with a sprinkle of gomasio, slivered almonds and a sprig of fresh parsley.
