SAUTEED FRESH SPINACH WITH GARLIC
 

2 1/2 lbs. spinach (about 4 bunches)
Salt and pepper
1/4 c. light olive oil
2 cloves minced garlic

Discard stems from spinach and rinse leaves. Put spinach in large saucepan with pinch of salt and very little water. Cover and cook over medium high heat about 5 minutes or until just tender. Drain. Combine oil, garlic and salt in frying pan. Heat over medium heat, stirring often, until garlic is tender and fragrant but not brown. Add spinach and cook, stirring often, until most liquid evaporated. Taste for seasoning. Serves 4.
