GREEK RICE
 

1 lb. bacon
1 stick butter
2 cans beef consomme
3 lg. onions
Add salt & pepper to taste
2 cans sliced mushrooms
1 med. head of lettuce
3 lb. rice
6 cubes beef bouillon

1. Put consomme and the bouillon cubes in a saucepan at medium heat (they will dissolve).

2. In a bigger pan or boiler (to make the rice) put the butter.

3. Cut the bacon, the onion (in small pieces) and add them to the butter. Add them one by one, cook on medium-high heat.

4. Add the mushroom. Cut the lettuce and add it to the butter to be "fried".

5. Add the consomme with the cubes to the butter.

6. Add the rice. Stir and add salt and pepper to taste. Wait until it dries, lower the heat to low and put the lid on the pan. Wait until it cooks all together. Serves 8.

Use half of ingredients to make 4 servings.
